3 Ingredient Pumpkin Cookies

I am so excited, and I just can’t hide it! We have received another recommendation from one of our readers. Kristin follows us on Instagram and sent us a picture of her batch of these 3 Ingredient Pumpkin Cookies. 3 ingredients? Did I type that right? Just three ingredients? Yes, I did! Thank you Kristin for being a such a loyal follower and sharing this tip. We think you Rock! As often as we surf Pinterest, had we seen this? No! What a great find.
This time of year is so fun with parties for fall and winter. Our family brings treats to all kinds of events during this busy season. Football games, work events, church parties, school celebrations, family gatherings, and socializing during the holidays with friends. With no eggs and no oil this recipe is low on fat, but not on flavor. My kids said they tasted even better the next day.These smell so good in the oven I can have a batch done in half an hour

My advice to you is this; keep the ingredients for this on hand. Stock your pantry! This is THE recipe for when you need to crank out something for events lightning fast. These cookies might scrimp on time, but not on flavor. They are light and cake like. Cookies and Cups called these 2 ingredient cookies, but Kristin glazed hers with a cinnamon glaze. I agree with Kristin, they are better with a little sump’n sump’n added. A little canned cream cheese frosting and it takes them to the next level. They are like bite sized portions of cake. I love finger food. How will you make yours? Add some white or chocolate chips? Maybe vanilla frosting with a dash of cinnamon? If you are like me during the holiday season, I will make them fast!

  • 1 box spice cake mix
  • 1 can 15 ounce can pumpkin
  • 1 tub commercial frosting
Instructions
  1. Mix spice cake mix and pumpkin. Scoop onto cookie sheet in rounded tablespoons. Bake 13 minutes at 350 degrees

These cookies are as fast as a rocket to make, and they Rock!

    After finding a box of spice cake mix in a cabinet I found this recipe and your wonderful blog. I’ll admit it, I was very apprehensive when I saw the lack of ingredients but what the heck I had no idea how long that cake mix was in there and the pumpkin pie filling was from Thanksgiving when I forgot to make my Hubs favorite pie. Like I said the lack of ingredients scared me, so I threw in a handful of raisins and chopped pecans. Into the oven went the first tray. As I waited the house started to smell pretty darn good. Off went the timer and i pulled them out. They sure don’t look like much. I let them cool. I ate one. Then I ate another one, and another one, and another one! They are an awesome cookie. I enjoyed them so much that I put the rest of the batter in baggies in the freezer so I can only eat one tray at a time Sweet Jesus! You Ladies have made a believer out of me, when You say “It Rocks” I will follow. They don’t need any frosting at all and I’m hoping that their less than spectacular appearance keeps my Hubs hands out of them. Of course I could just hide them in the cabinet I found the cake mix in. I know he won’t find them there. Thanks for your hard work. I’ll be checking with you often and for everything!

  6. I’ve been making this in cake form for years with just a bit of water. It’s great for those like me with egg allergies or those watching cholesterol. It works great with devils food cake mix too. Less of a pumpkin flavor.
