Cinnamon Swirl Bread Recipe

I’m gonna assume that if you are here you love pinterest! We all have tons of boards (well I know I do) full of recipes we think look good, and that we want to try but so often never try! So I’m excited to try some of my pinned recipes out and share them with you!

I love love LOVE breakfast (but usually at dinner time, breakfast for dinner is HUGE at our house). And I’ve been wanting to share my AMAZING french toast recipe, but rather than share it with boring regular bread this time I wanted to make something special. Cinnamon Swirl bread… and let me tell you… it is seriously rockin!

Anyway, I went searching for a good recipe on pinterest and stumbled upon this pin, EVERYTHING I’ve ever tried from King Arthur Flour is great so I knew it would be a good one to start with.

I was right, this recipe is delicious! And it’s actually a super easy recipe, it can be made in your bread machine (single batch) or in you mixer (I use a Bosch so I can make HUGE batches at once, I went with a double batch this time) with a dough hook. But it’s so good I will DEFINITELY be making an extra large batch next time (tomorrow, seriously so easy and so good). After letting the yeast proof just mix everything together until the dough is nice and smooth. Place in an oiled bowl, cover and let rise until doubled in size.

So now you have a pretty classic bread dough, in fact if you have a recipe you love, or even a frozen dough (like from Rhodes) you can more forward with any of those. Pat out the dough (6×8 inches) and move on to the next step, brushing the dough with an egg mixture then sprinkling on the cinnamon sugar mixture! Roll it up, pinch the edges and place into a prepared pan (I suggest Bakers Joy, it’s AMAZING) seam side down.

Cover and let it rise until it’s about an inch over the pan. Now bake it (to keep the crust from getting too dark cover it with foil for at least half of the baking time, I wanted the crust softer for the french toast so I left it off longer. Now it’s time to ENJOY!!!

Cinnamon Swirl Bread Recipe
  • 2½ tsp active dry yeast
  • 1⅛ C lukewarm water
  • 3 C All-Purpose Flour
  • 1¼ tsp salt
  • 3 Tbsp sugar
  • 6 Tbsp butter, room temperature
  • ¼ C nonfat dry milk
  • ½ C instant mashed potato flakes
  • ¼ C sugar
  • 1½ tsp ground cinnamon
  • 2 tsp All-Purpose Flour
  • 1 large egg beaten
  • 1 Tbsp water
  1. Mix the water, sugar and yeast in your mixer (with a dough hook)
  2. Let it sit for 15 mins, it will bubble and expand
  3. Now add in everything else and begin to mix
  4. The dough will be sticky at first but after awhile the dough hooks will do it's job, the dough will come together and start to ball up.
  5. Lightly oil a bowl and place the dough inside, cover with a damp dishtowel
  6. Allow it to double in size, it will be around an hour, but depending on your humidity (or lack) and elevation it could be a little less or more.
  7. Once it's doubled place on a lightly greased surface and pat out to a 6x8 rectangle
  8. Beat the egg and water together and brush it over the dough (you won't use it all)
  9. Mix the sugar, cinnamon and flour, sprinkle over the dough generously.
  10. Start on one 6 inch side roll the dough up
  11. Pinch it closed
  12. Prepare a loaf pan, I like to use Bakers Joy
  13. Place the dough, seam side down in the pan
  14. Cover with a bit of greased saran wrap (again, I just spray it with bakers joy)
  15. Let rise until it's about an inch above the pan, about an hour
  16. Preheat the oven to 350
  17. Bake the bread 40-45 mins. After the first 15 mins cover it loosely with aluminum foil to keep it from getting too brown.
  18. Let cool and slice!

Let cool slightly, and using a serrated knife slice! Enjoy warm, with butter and more cinnamon/sugar OR make the best french toast ever. And if you like breakfast foods, or bacon, you’re going  to love my site…
