So I know I am quite behind the times when it comes to pudding cookies. Before we started blogging last year, I had never heard of putting pudding in cookies. We’ve added pudding to rolls, coffee cakes and cinnamon rolls, but never cookies! When I saw these Oreo Pudding Cookies from Cookies and Cups, I knew I had to try them. You see, my family loves cookies and cream desserts, so I knew these would hit the spot!

We made these one afternoon for a group of kids that were going to hang out at our house for the afternoon. Let me tell you…they were a hit! The little ones kept coming back asking for “just one more!” There were just a few left over that I sneaked to our hiding spot on the top of the fridge. I ate them the next day and loved them just as much as the first day. There’s not too many cookie recipes that I can say that about, since fresh-from-the-oven cookies are my favorite! These cookies on the second day were still perfectly soft and the “cookies and cream” flavor really seemed to pop.

We made just a couple of slight adaptations to the original recipe. We added a bit of cocoa powder to give them more of a chocolaty taste and left out the oatmeal. We also added one cup of chopped Oreos. Because after all, Oreos make everything better.

Cookies and Cream Pudding Cookies

1 cup butter, softened
3/4 cup white sugar
3/4 cup brown sugar
1 package (4.2 oz) Oreo pudding mix
1 tablespoon vanilla
2 eggs
1 3/4 cup flour
1/2 cup cocoa powder
1 teaspoon baking soda
1 teaspoon salt
3 full-size Hershey Cookies and Creme bars, chopped
1 cup chopped Oreos

Preheat the oven to 375. In a stand mixer, cream the butter, sugar and pudding mix together. Add the vanilla and eggs and mix again. Then add the flour, cocoa powder, baking soda and salt. Mix well. Fold in the Hershey bars and chopped Oreos.

Drop by rounded tablespoons onto a baking sheet and bake for 8 minutes. Allow the cookies to cool on the baking sheet for 5 minutes before removing to a wire rack. Store in an airtight container.
