Easy Cauliflower Mash Recipe


This Easy Cauliflower Mash Recipe is so easy to make and whenever I serve it nobody guesses it is not potatoes! Low Carb, low calorie and so healthy. We make this once a week, at least!Have you noticed that cauliflower is the new “it” food? I see cauliflower recipes everywhere on Pinterest. And with good reason. It is healthy, easy and delicious. Even kids like it. It is comfort food good enough for a holiday meal or a weeknight dinner.
This recipe for Cauliflower Mash is so versatile. It is delicious with sour cream instead of heavy cream, love it with chives, and is great topped with cheese and bacon for a twice baked flavor. If you are a garlic lover, throw some in! I like mine with roasted garlic and a little fresh grated parmesan!

Easy Cauliflower Mash Recipe
 
Ingredients
  • 1 head cauliflower, rinsed and drained, cut into florets
  • 2 Tablespoons heavy cream
  • 1 Tablespoon butter
  • salt and pepper to taste
Instructions
  1. Place cauliflower florets in a microwave safe bowl and cover with plastic wrap.
  2. Poke holes in plastic wrap with fork.
  3. Microwave for 6 minutes
  4. Add cream and butter and toss to coat.
  5. Place in high power blender or food processor.
  6. Blend until smooth.
  7. Add salt and pepper to taste.
Notes
To add different flavors, try sour cream and chives, garlic, or cheese and bacon. This is a very versatile recipe!

  1. Looks lovely but I think the popularity of cauliflower is all around the 5+2 diet and I don’t think the dairy would go down quite so well! I love cauliflower however it’s served, even just boiled (I know! Shocker!)

    • It took me a while to respond because I was looking up info about the diet you referenced. Sounds like it is big in the UK. Not so much in the states, yet.But now I am intrigued. Many of the low carb diets popular here do not have issues with the use of dairy, so this will work well for those diets. I don’t find I have a problem with the small amount of dairy in this recipe. I have been able to maintain a 40lb weight loss for over a year with recipes like this one. In fact, it is a family favorite. We are like you, I think cauliflower may be our all time favorite vegetable, but then there are green beans, so no…cauliflower has some real competition. Haha!
